Daniel Boulud is certainly one of the best-known French chefs in the USA. And more than just a chef, he’s also a truly successful entrepreneur, with his name on numerous restaurants, bars and grocery stores in the U.S. and around the world. Daniel Boulud honored me with a visit to his legendary two michelin starred restaurant Daniel in New York for a passionate discussion about French gastronomy and its influence abroad. A meeting that was followed by an unforgettable dinner and a few glasses of Armagnac at the bar. Today I’m taking you to New York for a gastronomic experience like no other. At the helm of the Eleven Madison Park restaurant, Daniel Humm is one of the only three-Michelin stars chefs and number 1 in the World’s 50 Best Michelin to offer a 100% vegan menu. It’s a totally mind blowing experience, with many funny nods to meat-lovers, such as this meat cleaver that’s attached to your table to make an astonishing carrot tartare. The maitake mushroom skewer is a monument of gourmandise that gave me almost the same pleasure as a lamb skewer. Today I learned of the passing of French journalist Jean-Luc Petitrenaud. A legendary food lover, tireless explorer of our terroirs, he was someone who influenced me enormously, who made me want to do what I do today, he did so much to support producers, chefs, to teach the French the good taste of good things and celebrate the richness of our gastronomy. My thoughts go out to his family and especially to my friend @louisepetitrenaud 🙏

Like @garyvee, Oysters and Sancerre is definitely one my favorite french food & wine pairing. The subtle acidity of the white Sancerre matches perfectly with the salty taste of the oysters, and the citrus notes of the wine enhance the tasting experience. It’s time to reveal my favorite restaurant of 2024. In Paris’ smallest palace, Jérôme Banctel is an extraordinary chef, a monster of work. Behind a classic façade, he uses techniques that break the codes, sometimes taking insane risks. A great game lover who masters the hare à la royal so well, you’d think he’d created it. Today I’m taking you to Lille in northern France to talk about... injustice. Meet Edouard Chouteau, France’s most talented chef without a Michelin star! Trained by Gagnaire, Fréchon and Pelé, this young chef once again treated me to a menu I won’t soon forget. It starts off like a slap in the face, with risky dishes like oysters and confit pork belly, or pig’s ears with caviar. Then the dishes follow, always gourmet with subtle and often original combinations. Squid, haddock and smoked garlic or sea bass and sea urchin civet, quince squash and apples. The hare à la royal is imperial, and I fell in love with this incredible dessert celebrating honey in all its forms. Edouard Chouteau doesn’t have any stars, but he’s been my star for a long time. Welcome to “La Régalade” in the heart of Paris. Bruno Doucet is a great classic chef who cooks with lots of love for his customers. His legendary french bistrot definitely cracked the Gourmandise code. In my religion, a good meal has to start with a good terrine, pickles and a glass of white wine. Bruno’s raw scallops with truffle is dope ! And these large prawns on a truffle mashed potato, and this ultra-tender venison, foie gras and Grand Veneur sauce are a real treat. We finished with a Grand Marnier soufflé, not forgetting the Chef’s legendary rice pudding. This week saw an exceptional lunch at the trendy gastronomic restaurant Les Enfants du Marché, located in a charming food market in the heart of Paris’ Marais district. Owner @michaelgrosman and groundbreaking japanese chef @shunta_suzuki0210 were joined by @mathieuchapel from @cotefish, a fisherman who advocates small-scale, local and sustainable fishing to guarantee the future of the industry, and Bertrand Lhôpital, grapefather and winemaker of @champagnetelmont. Sublimated mediterranean fishes caught the day before by Mathieu were paired with Champagne Telmont cuvée Réserve de la Terre, crafted from organic grapes without herbicides, pesticides, fungicides or synthetic fertilizers. This Cuvée with a very low sugar dosage (2,5g) is radiant, solar, full of life. Today I take you to one of Paris’s most endearing Michelin-starred chefs. Thomas Boullault is a monument to refined bourgeoise cuisine. After an excellent Sancerre @lestang1573, I’m delighted by his grilled oysters with pork belly, smoked potato crush with caviar, and his mind blowing scallops with white truffle and Arbois wine emulsion. But I came for his legendary hare « à la Royale » ! « A hare that’s been boned, opened flat and pounded. It’s stuffed with hare, foie gras, truffles and pork. It’s a sauce made with hare carcasses, a civet sauce that’s bound with blood. Hare à la royale is a great dish in our gastronomy, in our French heritage. And it’s one of the most melt-in-your-mouth dishes in the world. That’s hare à la royale. The elite of French gastronomy were on hand to celebrate the 70th anniversary of the famous association of luxury hotels and restaurants “Relais et Chateaux”. 4 French three-Michelin-starred chefs prepared an exceptional menu for 850 guests.
