Bit of a different post from me but I wanted to share this video that popped up on my memories, it bought all the feelings flooding back. A year ago, I got the biggest news of my life, and with it came 1001 emotions I still struggle to put into words. I remember the fear, the uncertainty, the ‘how on earth am I going to do this?’ But if I could go back, I’d tell myself, It’s going to be okay. And if you’re reading this, feeling nervous about what the next year holds, whether it’s job worries, relationship struggles, or something you never saw coming..please know this: It will work out. And if it hasn’t yet, it’s not the end. ❤️ I know it’s cliche but the biggest hurdles in life have the greatest finish lines
Mr Grack took the baby for an hour and cooking and baking is my therapy 🧘♀️ Recipes- Bread maker recipe was from @goodfoodeveryday Peanut butter chocolate chunk bars 3 cups old-fashioned rolled oats 3/4 cup natural peanut butter* ⅓ cup honey ½ cup choccy chips 2 eggs INSTRUCTIONS 1. Preheat oven to 350℉. 2. In a large bowl, combine all ingredients and mix well. *If your peanut butter is solid at room temperature, heat it for 10-15 seconds to make it a more drizzly consistency before adding to the mix. 3. Line a 9×9 inch baking dish or pan with parchment paper. 4. Transfer the mixture to the prepared dish or pan. Very firmly press the mixture into the pan in an even layer — the firmer you press, the better the bars will stick together. 5. Bake for 15-17 minutes or until the center is baked through and the edges are just starting to brown. Start checking at 14 minutes, as all ovens are different. 6. Remove from the oven and place pan on a cooling rack. 7. Let the bars cool completely before cutting into 16 squares with a sharp knife Crackers- 1 and a half cup plain flour 1/2 cup grated parm 1/2 tsp garlic powder 1 tsp mixed herbs (I ran out so just used oregano) 2 tbsp olive oil 1/4 cup water 1/3 tsp salt Sprinkle of parm for the top and crack of black pepper Optionally I added a tablespoon of seeds! Mix all ingredients in a bowl (I just used my stand mixer). Divide the dough in half. Roll out one of the halves of dough inbetween two sheets of parchment, then slice in to whatever shapes you want (I did this with chopsticks in to little squares). Repeat with second section of dough. Sprinkle with Parmesan and a crack of black pepper. Bake at 200 degrees for 10-12 mins until golden brown.
