BREAKFAST TO GO ๐ My week day breakfasts are always on the go, prepped and ready to take to work. Todayโs jar has overnight oats, chia seeds and a big protein hit, topped with frozen berries for a fresh healthy and filling breakfast- itโs such a great start to the day ๐๐ฏ๐ Deets: 125g soya yoghurt 1 scoop @myprotein salted caramel soy isolate Soya milk 20g oats - @myprotein 2 tspn chia seeds - @myprotein Fresh or frozen berries - add the yoghurt and protein powder to a bowl and whisk with some soya milk until you have a smooth and slightly loose mixture - Add the oats and chia seeds . TOAST TUESDAY ๐ I love a Toast Tuesday dinner - theyโre so quick and easy to make and are a topped pile of comfort on a plate. Hereโs one of my favourite combos; @jasonssourdough seeded protein sourdough (for the gains ๐ช) topped with sweet chilli hummus and sticky glazed tofu with stir fried peppers ๐๐ฏ๐ I sometimes I make a double batch of the sticky tofu so that I have some ready made in the fridge to reheat on Toast day - it couldnโt be any simpler. COFFEE & HAZELNUT CAKE ๐ What could be easier than a 3 ingredient cake hack thatโs also accidentally vegan? If you know me, you know I love a homemade cake, but when time or ingredients are short, this cake hack is perfect and accidentally vegan. Your friends and family will think youโre a Bake Off winner! ๐คฉ Just add 300ml (just less than a can) of fizzy drink to a box of Betty Crocker cake mix and voila! AUBERGINE, LENTIL & TOFU DAHL ๐ This has to be the creamiest, tastiest dahl with hidden gains in the creamy curry sauce - perfect for the weekend and yet another way to include silken tofu and add extra protein ๐๐ฏ๐ Recipe- serves 4-6 Ingredients 2 aubergines, chopped into 2 com chunks 2 onions, diced 4 garlic cloves, crushed 2 tspn garam masala 2 tspn ground coriander 2 tspn cumin 1 tspn turmeric 1/2 tspn chilli flakes (or one fresh chilli, diced) 200g red lentils, rinsed 1 tin chopped tomatoes 200g fresh tomatoes, chopped 500ml veg stock 1 carton silken tofu 2 tbspn nutritional yeast 100ml veg stock 1/2 lemon, juiced Method - gently fry the aubergines with a little oil or spray oil in 2 batches until cooked on all sides. Spoon them onto a plate and keep until needed in a little while - Add the onions to the pan, frying for a couple of minutes before adding the garlic and then the spices, stirring through for 2-3 minutes - Add the rinsed lentils, tinned tomatoes, veg stock, stir through and add the fresh tomatoes - Simmer for 20 minutes until the lentils have softened and absorbed some of the liquid - Meanwhile blend the silken tofu, nutritional yeast and 100ml veg stock until smooth - Once the lentils have softened, add the silken tofu sauce, stirring it through and continue to simmer for another 10 min - Add the lemon juice, season to taste and return the aubergines to the pan - Serve with rice and/or nan, garnish with fresh coriander, red onion and chilli - Enjoy ๐ Have you tried adding silken tofu into your curry or pasta sauces? ๐ฅฐ

PACKED LUNCH PREP ๐ Itโs the first day back to work after Christmas, which means back to the lunchbox meal prep ๐๐คฉ If youโre in need of some packed lunch inspo this week, then look no further Hereโs an easy all in one Tofu & Vegetable Harissa Tray Bake, served with quinoa and a homemade coriander hummus - the tofu tray bakes are some of my favourite meal preps as they are SO easy๐๐ฅฐ Deets (per lunchbox) ๐ฑ 110g @tofoo tofu, cubed ๐ฑ 70g red pepper ๐ฑ 70g broccoli ๐ฑ 30g red onion ๐ฑ 60g sweet potato ๐ฑ 2 tspn harissa paste ๐ฑ chop the vegetables into equal sized chunks (same size as the tofu) ๐ฑ add the tofu and vegetables to a baking tray with the harissa paste and rub everything together to coat the vegetables with the paste. Spray with a little spray oil. ๐ฑ bake at 200* for 30 minutes until the vegetables are soft, including the sweet potato ๐ฑ serve with quinoa Coriander hummus (I used 1/6 of this in a lunchbox) 1 tin chickpeas, drained 1 garlic clove 1 lemon, juiced 1 tbspn tahini A handful of coriander 1/2 tspn salt Put all the in ingredients into a blender and blitz it until fairly smooth. Add a little chickpea water if needed to loosen the mixture.
