No yeast, 15 min pizza dough! Honestly, so so simple to make! And you need just a few ingredients!! I know a lot of you guys don’t eat yeast so this is the perfect alternate to it! Mix together 1 1/2 cups maida/plain flour and 1 1/2 tsp baking powder and pinch or two of salt. Add 3/4 cup Greek yogurt and mix it with a spoon! Transfer to a work surface and knead into a dough. Add more flour if it’s too sticky! Now start shaping the dough into a pizza- edged thick and centre thinner! Now if you want you can blind bake this - bake with no topping for 5-10 mins at 200C after poking with a fork. Or you can assemble the pizza and then bake it for 20-22 mins! Be careful because the cheese might get a little tooo brown, so you can add it midway as well. STIR FRY VEG IN WHITE GARLIC SAUCE - Ep 6 of vegan and gluten free recipes - this is my absolute FAV!! And it’s sooooo easy!!! It’s got a good punch of garlic and lots of veggies. I was out of tofu, so didn’t add it but I also highly recommend adding silken tofu to this to make it healthier. Recipe: Heat 1 tbsp sesame oil in a pan, on a medium high heat, add 2 heaping tbsp munched garlic and 1 tsp ginger, stir fry for 30 secs. Add 2-3 tbsp spring onions + 1 tbsp finely chopped celery stem and stir fry for another 20 secs. Add veggies of your choice. I’ve used baby corn, bokchoy, carrots, cabbage, you can add amy more of your choice. Bow sauté these for 3-4 mins. Add little salt and splash little water to prevent them from burning or sticking because you’re cooking on a high flame. Now add 1 1/2 cups veggie broth + 1 tsp tamari / soy sauce. I used tamari as I’m not currently eating gluten and soy sauce does contain gluten. Optional: 1/4 tsp rice vinegar + pinch of sugar. I don’t recommend white synthetic vinegar for this as everything gets toooo sour. Now lower the flame, let it simmer for 2-3 mins and then mix 2 tsp cornflour in 1/4 tsp water and add to the gravy. Add proteins like silken tofu at this point. Simmer till thick, season with more salt/soy sauce if you want. CREAMY HERBY MUSHROOMS ON TOAST ❤️ My Sister and dad are obsessed with mushrooms of all kinds! And every week they ask me to make new things with them, so here you go - Before you see the recipe I just want to tell you that I know you would’ve seen many versions of this on Instagram, this isn’t copied, this is just my way of making it! If it resembles someone else recipe, I apologise and pls tell me! Solidarity and support all the way ❤️ RECIPE: 2 tsp butter and olive oil 1 onion, finely chopped 1 tbsp minced garlic (reduce if you don’t like it) 3-4 cups sliced button mushrooms 1/4 tsp dried thyme 1/4 tsp dried rosemary (if you use fresh, double the quantity) 1/2 tsp chilli flakes Salt and pepper 1/4 cup vegetable broth (optional) 1/3 cup heavy cream Handful of fresh basil! VEGETABLE CUTLETS What a banger of a recipe this is! And it makes use of a lot of the extra veggies you have at home! What I love about the recipe is that you don’t need to follow a set pattern, you can do as you like and it’ll still taste fab! Here’s how I made it. Recipe - mix together 1 large potato, boiled 1/2 sweet potato, boiled 2 cups different veggies - I’ve used 1 small grated carrot, 1/2 grated zucchini (water squeezed out), 1/2 small grated beet, 1/2 chopped onion, 1/3 cup boiled peas and corn, 1/3 cup grated cabbage (water squeezed out) Along with this mix together a tadka of 1 tbsp oil, 2 green chillies, 1 tsp Jeera, 1 tsp chopped ginger and 2 tsp garlic. Also add 2 tbsp chopped coriander, 3/4 tsp pav bhaji masala, 1 tsp chilli powder, 1/2 tsp garam masala, 1/2 tsp chaat masala salt to taste. For binding I have used 4 tbsp jowar atta but you can use any millet flour or oat flour as well. Do not over mix as the mixture will start releasing water. Shape into patties and refrigerate for 30 mins. Heat oil in a large pan. Once hot and shimmering, coat your patties with jowar flour and dust off the excess. Shallow fry till golden and crispy on both sides. Drain on paper towels and give a sprinkle of salt and chaat masala while still hot! SCHEZWAN SAUCE - Ep 1: Sauces This is Rahul’s favorite sauce I think! He eats it with everything. And I told him I make the best schezwan and hopefully he’ll agree once he tries 😂 Heres the recipe: Soak 20 kashmiri chillies, remove some seeds if you want, and soak in hot water for 30 mins. Then grind into a paste as smooth as possible. Heat 1/3 cup oil in a pan, add 1/3 cup + 2 tsp minced garlic, 1 tbsp minced ginger, 2 minced green chillies. Sauté for 1 min and then add 1/2 finely chopped onion and cook for 1 more min. Now add 1 tbsp each of finely chopped celery and coriander stems and cook till the aromatic are not raw anymore and are not starting to brown. Now add the chilli paste and cook for 2 mins. Then add - salt, pepper, 1 tsp sugar, 3/4 tbsp ketchup, 1 1/2 tbsp soy sauce, 1/2-1 tbsp vinegar (start with half and taste and increase), and mix well. Add 1/2 cup water or vegetable stock and cook on a low medium flame, covered but frequently stirring, till the oil starts to separate! Cool down and store in the fridge for 3 weeks! Sarson ka saag - winter greens special! I have to start by saying, I wasn’t a fan when I first had it, mostly because I didn’t know what to expect. but since I’ve started cooking myself, I’ve vowed to try the food I don’t like and I’ve knocked this out of the parkkkk. The beauty is in the simplicity of the recipe - little to no spices, using desi ghee and Makhan and staples for cooking and voila! Recipe: 4 cups finely chopped sarson (mustard leaves), 3 cups finely chopped spinach and 1 cup finely chopped bathua! You can even add radish leaves or methi. Heat 1/4 cup water in a pan and add all the greens, cover and slow cook for 20 mins. Now add 1 tbsp minced garlic, 1/2 tbsp minced ginger and 3 green chillies, minced. Mix and cover and cook again for 20 mins. At this point the saag will be soft and can be mashed! Use a Madhani or a masher till you get a slightly smooth paste. To this, add a little more water, and 1/2 cup makai atta and salt to taste. Mix it well and cook for a few mins. In a separate pan, heat ghee and Makhan, saute 1 tbsp each of ginger and chilli and a little over 1 tbsp of garlic. Add 2 dried red chillies and 1 finely chopped onion and saute till slight browned. Add to the saag and cook for a 1 or two. You can even add tomato to this! Pesto cheese buns! 🫶 The BEST way to use leftover burger buns! I had some pesto in the freezer, and some buns in the fridge so just had to useee ittt! What I’ve done - cut out a hole from the centre of the bun, drizzled some oil in it. Make sure you don’t cut out the hole till the bottom of the bun! Spread pesto in the cut out portion, followed by sliced tomatoes, salt pepper, whatever cheese you prefer! Added some pizza seasoning and olive oil and covered with the cut out bread. Bake for 10-12 mins in a preheated 180C oven till the bread is crispy and cheese has melted!! Kimchi tofu soup! 🍜 It’s soooo comforting and such fab flavors, perfect for the winters and so quick to make!! Okay I know not everyone has kimchi at home buttttt @urbanplatter.in has a sick kimchi seasoning that is perfect for flavoring soups like these! I’ve also used their gochujang (Korean chilli paste) for that extra kick! Recipe: In a pan, heat some sesame oil and saute onion and garlic. Now add veggies of your choice, I’ve kept it simple with carrots and cabbage. Let them cook for 2-3 mins and then add the @urbanplatter.in kimchi seasoning 1-2 tsp and 1 tsp gochujang and saute for 30 secs. Add 2 cups of water or veggie broth, salt, a pinch or two of sugar and handful or broken rice noodles. It’s that simple! Cover and simmer till the noodles are almost done. Finally for the last 2-3 mins add some bokchoy and sliced tofu. Tomato Bhorta ✨✨✨ This classic dish is eaten in many parts of the country and even Bangladesh and it’s SO FREAKING GOOOOD If you’re not a fan of mustard oil, you will convert after this! The dish is stunning! Eat with some hot rice or roti!🥹🥹🥹 Recipe: In a pan, heat a little mustard oil/ if you don’t like the flavor too much you can skip it here and regular cooking oil instead. Char 2 dried chillies in it. Remove them and roast a few whole garlic cloves - 6or 7 and cooking till they also get a little char. Now cut 1 large onion into slices. Use half of it and saute it till golden. Take 4 tomatoes, place them in a pan, cut side down and cover and cook for 4-5 mins. They’ll steam in their own liquid and the skin will come off easy while the cut part will char. Now mash everything together - starting with chillies and garlic. Then add the cooked and raw onions. Then finally the tomatoes, salt, pinch of sugar, fresh coriander, and IMPORTANT - MUSTARD OIL - 1 tbsp. Pesto quinoa paneer bowl - Ep 2 of clean eating Since yall loved the clean eating video I made before, so I haddd to do one more. And I’ll be making this one on the regular! Recipe: For the pesto- 5-6 walnuts, 5 tbsp olive oil, 1 1/2 cups fresh basil, 3-4 garlic cloves, 1 tbsp lemon juice, salt and pepper. You can even add 2 tbsp Parmesan to this. Mix this pesto with 1 cup cooked quinoa and keep aside. Coat 100g paneer in mixed Italian herbs, chilli flakes, salt pepper and olive oil and pan fry till golden brown. Take 2 cups veggies of your choice and 1/2 cup boiled chickpeas. Season with salt, pepper, oil, and a seasoning mix of your choice. I’ve used @naaginsauce spice mix! You can even do a mix of cumin, coriander, chilli, oregano, garlic. Bake for 20-25 mins at 200c, stirring in between. For the sauce - mix together 3 tbsp yogurt with 1 tbsp tahini, 1/4 tsp cumin powder, 2 cloves minced garlic, 1 tsp lemon juice and salt.
