Back in May, @anastasiiakovbur asked me how to make corn fritters. Finally got my hands on some fresh corn, so here goes. Two stalks of fresh corn Husk the corn and break in two. Boil in salted water until tender (about 20 minutes) Remove kernels from cobs and place them in a bowl. Season with salt and pepper, 2 tablespoons of chopped chives and one tablespoon of flour. Mix well. Take half of this corn mixture and set aside to use another day. Stiffen one egg white and fold into half the corn mixture to make four fritters. Heat 3-4 tablespoons of safflower oil in a pan. Lightly salt the oil. Once hot, take a large scoop of corn batter (about two tablespoons) and place it in the oil; then make another. The fritters should not touch each other in the pan. This mixture makes four fritters. Each fritter is about two tablespoons of corn mix. Fry until golden, then turn and fry on the other side until golden. Obviously, if you want to use all of the corn mix to make eight fritters , you will have to stiffen two egg whites. Enjoy with garnish of your choice. I like a garlic guava sauce! 🥰 #Alwaysenough #Foodforpeople #cornfritters
