Today we would like to introduce about our chef. The owner-chef, Masaki Hashimoto, has been in Toronto, Canada for 35 years. He trained in kaiseki cuisine for 15 years at "Iwakuni" in Ehime Prefecture and โ€œKocho" in Tokyo. He was one of the few kaiseki chefs who left Japan for a new place. In 2007, he participated in the prestigious first Japanese Culinary Competition and represented Kyoto in the finals the following year in 2008. Out of 11 finalists from all over Japan, he was selected as one of the top five and won the technical award. Since the memorable first edition of the prestigious competition, now in its eighth year, he has kept his skills as a kaiseki chef and is recognized both in Japan and in Toronto. At Hashimoto, each guest can be assured that they will be provided the best quality as the chef himself is the main one in the kitchen preparing the dishes from start to finish for every guest. Today I would like to introduce Japanese culture. What do you imagine when asked what you think of Japan? I think there are various opinions such as overworked, polite, anime, traditions and culture. Among these, I think it is "Omotenashi" (hospitality) that has attracted much attention in recent years. It is known for its presentation of the 2020 Tokyo Olympics. The origin of the word "omotenashi" is the verb "to entertainโ€. This word became a polite word and became omotenashi, but the meaning of omotenashi itself is "to accomplish with thingsโ€. โ€œThingsโ€ here refers to two kinds of means: things of visible objects and things of invisible events. In other words, things and minds. And to accomplish with โ€œthingsโ€ means "to use things and minds to improve the treatment and attitude when dealing with customersโ€. From this etymology, the meaning of omotenashi also includes "to satisfy others by treating them with respect. Daruma is not just a decoration, but actually has a deep meaning and origin hidden within it. The Daruma doll is modeled on the figure of Ambassador Daruma, the founder of the Zen sect of Buddhism, sitting in zazen meditation. Ambassador Daruma's teachings were two. Have you ever been to Japan? There are various tourist attractions in Japan. Each region has its own specialties and local good points of interest. Among them, I would like to introduce the torii gates of shrines.โ›ฉ A normal torii is one and is located at the entrance of a shrine. It represents the boundary between the inner sanctuary of the shrine and the outer place where humans live. The color red is thought to bring sunlight and warmth needed for rice cultivation, as well as to ward off evil. The reason for the large number of torii gates is the number of wishes and thanks from people who come to visit. Since the Edo period (1603-1867), the culture of dedicating a shrine to the fulfillment of wishes or to have wishes fulfilled still remains. There are also 9 torii gates at the entrance of our restaurant. Please take a look.
