Today we would like to introduce about our chef. The owner-chef, Masaki Hashimoto, has been in Toronto, Canada for 35 years. He trained in kaiseki cuisine for 15 years at "Iwakuni" in Ehime Prefecture and โKocho" in Tokyo. He was one of the few kaiseki chefs who left Japan for a new place. In 2007, he participated in the prestigious first Japanese Culinary Competition and represented Kyoto in the finals the following year in 2008. Out of 11 finalists from all over Japan, he was selected as one of the top five and won the technical award. Since the memorable first edition of the prestigious competition, now in its eighth year, he has kept his skills as a kaiseki chef and is recognized both in Japan and in Toronto. At Hashimoto, each guest can be assured that they will be provided the best quality as the chef himself is the main one in the kitchen preparing the dishes from start to finish for every guest. Today I would like to introduce Japanese culture. What do you imagine when asked what you think of Japan? I think there are various opinions such as overworked, polite, anime, traditions and culture. Among these, I think it is "Omotenashi" (hospitality) that has attracted much attention in recent years. It is known for its presentation of the 2020 Tokyo Olympics. The origin of the word "omotenashi" is the verb "to entertainโ. This word became a polite word and became omotenashi, but the meaning of omotenashi itself is "to accomplish with thingsโ. โThingsโ here refers to two kinds of means: things of visible objects and things of invisible events. In other words, things and minds. And to accomplish with โthingsโ means "to use things and minds to improve the treatment and attitude when dealing with customersโ. From this etymology, the meaning of omotenashi also includes "to satisfy others by treating them with respect. Thinly sliced is a method often used for fish with a lean body, such as sea bream, flounder, and puffer fish, in which the sliced fish is cut into very thin strips. The essential ingredient for the beauty of Japanese cuisine is "ashirai" (arrangement). This "ashirai" is decoration. Even though it is basically edible. It is also always served with sashimi as a palate cleanser. There is also something very important when eating sashimi. That is, wasabi should not be dissolved in soy sauce, but should be dipped in the fish. Today, we would like to introduce Japanese Daruma dolls, which we are often asked about in our restaurant. Daruma has been loved by many people as a symbol of good luck for a long time. Daruma is not just a decoration, but actually has a deep meaning and origin hidden within it. The Daruma doll is modeled on the figure of Ambassador Daruma, the founder of the Zen sect of Buddhism, sitting in zazen meditation. Ambassador Daruma's teachings were two. Take responsibility for your actions and be patient. Do what you can do and be sincere in your daily life. If we follow these teachings, there is nothing we cannot accomplish. Daruma dolls remind you of these teachings and help you get closer to your wishes and goals. So why does Daruma have one eye? There is a deeper meaning to it, and it seems to have a slightly different nuance in each region. One eye is drawn to express a wish. When the wish comes true, the other eye is drawn. It is said that this culture started when smallpox was prevalent during the Edo period. When people contracted smallpox, their eyesight was impaired, and Daruma dolls with beautiful eyes became popular. Todayโs introduction is hamo fish(conger pike). Hamo is in season from June to August. This white-fleshed fish can be enjoyed in a variety of ways, such as boiled, sashimi, and tempura. Hamo is an essential ingredient in Kyoto cuisine. It is rich in nutrients such as vitamin A, calcium, and vitamin B2. It is also rich in DHA and EPA (expected to prevent arteriosclerosis, myocardial infarction, diabetes, and cerebral infarction). It also contains chondroitin, which has an anti-aging effect on the skin. Have you ever been to Japan? There are various tourist attractions in Japan. Each region has its own specialties and local good points of interest. Among them, I would like to introduce the torii gates of shrines.โฉ A normal torii is one and is located at the entrance of a shrine. It represents the boundary between the inner sanctuary of the shrine and the outer place where humans live. The color red is thought to bring sunlight and warmth needed for rice cultivation, as well as to ward off evil. The reason for the large number of torii gates is the number of wishes and thanks from people who come to visit. Since the Edo period (1603-1867), the culture of dedicating a shrine to the fulfillment of wishes or to have wishes fulfilled still remains. There are also 9 torii gates at the entrance of our restaurant. Please take a look.
