Lots of you went wild for the Bailey’s Christmas Cake Cheesecake (tbf it was banging) so thought it deserved a place on the grid along with the super simple recipe for all your Christmas feels, happy first weekend of December 🍰🍰🍰🍰🍰🍰🍰 Ingredients 300g Christmas cake 250 digestive biscuits 100g melted butter 400g cream cheese 250g mascarpone cheese 100g caster sugar 75g golden caster sugar 100ml double cream 1 Tsp mixed spice (cinnamon) 3 large eggs 3 Tbsp Baileys Zest of an orange Method 1. Preheat your oven to 140 (fan) 2. Crush the digestives using a rolling pin and stir in 1/2 a tsp of the mixed spice. 3. Combine the biscuits with melted butter and press firmly into the base of your cheesecake pan. 4. Crumble half of your Christmas cake and press gently onto your biscuits base. 5. Pop into the fridge to chill 6. In a separate bowl whip the double cream. Add the cream cheese, mascarpone, caster sugar and eggs. Blending everything together until smooth. 7. Stir in the other half of the mixed spice, baileys and zest of an orange 8. Gently fold in the remaining Christmas cake into the cream mixture. 9. Take out your biscuit base from the fridge and cover with the cream mixture making sure to smooth out evenly. 10. Put in the oven and bake for 45 minutes (leave in the oven to cool down 11.
