SWEET POTATO CURRY šŸ  ( EPISODE 3 ) Ready in literally 30 minutes! Ingredients: • 1 tsp oil • 1 onion, diced • 3 cloves garlic, minced • 1 tsp ginger, minced • 3 tbsp red Thai curry paste • 2 sweet potatoes, parboiled and diced • 1 tomato, diced • 1 red bell pepper, diced • 1 cup spinach, chopped • 400 ml coconut milk • 2 cups water • 2 tbsp peanut butter • 1 tbsp lemon juice • Salt to taste Method: •Heat oil, sautĆ© onion, garlic, and ginger. •Add tomato, bell pepper, and curry paste. •Stir in peanut butter, coconut milk, and water. •Add sweet potatoes, cook for a few minutes. •Add spinach, salt, and turn off heat. •Add lemon juice, adjust seasoning, and serve with rice or naan! #SweetPotatoRecipe #SeasonalProduce #WinterRecipes #VegetarianMeals #30MinuteMeals #ComfortFood #IndianFood #CurryLovers #HealthyEating #WholesomeDinners

I’m back with my seasonal produce series, featuring fresh, flavorful recipes made with January’s best produce!šŸ’š Hara Chana Chaat (Episode 1) 1. Boil 1.5 cups of hara chana with salt for 7-8 minutes. 2. Dry roast 1 cup of hara chana. 3. Mix boiled and roasted chana with diced onion, tomato, green chilies, chaat masala, cumin powder, red chili powder, salt, and lemon juice. Add 1 tbsp of green garlic. 4. BEETROOT PANEER BOWL Welcome back to my 100 DAYS OF PANEER! I’m obsessed with how aesthetic this recipe has turned out! šŸ˜ Not only is it bursting with vibrant colors, but it’s also packed with protein and nutrients Ingredients - For Paneer: 1. 100 gm paneer 2. 1 tbsp za’atar spice mix 3. 1 tbsp smoked paprika 4. 1 tbsp olive oil For Beetroot Yogurt Sauce: 1. 1 cup Greek yogurt 2. 1 beetroot, boiled and grated 3. Some fresh parsley and coriander 4. 1/2 tsp salt 5. 1/4 tsp white pepper 6. Juice of 1/2 lemon (for tanginess) For Tadka: 1. 1/2 tbsp olive oil 2. 1 tsp cumin seeds 3. 10 fresh mint leaves Method: Beetroot Yogurt Sauce: 1. Mix Greek yogurt, grated beetroot, parsley, lemon juice, salt, and pepper in a bowl. 2. Prepare a tadka in a vessel with olive oil, cumin seeds, and mint leaves, and add it to the yogurt mixture. Stir well and set aside. Paneer: 1. Marinate paneer with sumac, smoked paprika, and olive oil for 10 minutes. 2. Grill the paneer in a pan with a bit of olive oil until golden brown on all sides. Plating: 1. Create a base layer with the beetroot yogurt sauce. 2. Place the grilled paneer on top or on the side for aesthetics. 3. Garnish with parsley/ coriander and pine nuts.
