Vegetable Jowar Paratha ๐ ~ Perfect Gluten Free option packed with winter veggies like green garlic, carrots & raddish โจ SAVE IT TO TRY SOON ๐ฉโ๐ณ Ingredients : 1/3 cup grated mooli / raddish 1/3 cup grated gajar / carrot ๐ฅ 1/3 cup chopped onions 1 tbsp ginger-green chili paste 1 tbsp green garlic 1.5 tsp salt Mix everything & rest for 5-10mins. This will release all the water from the veggies 1 tbsp ajwain 1.5 tbsp white sesame seeds 2 tsp cumin-coriander powder 1 tsp red chilli powder 2/3 tsp turmeric powder 120g low fat paneer 2/3 cup jowar aata 1/3 cup besan Handful of coriander leaves ๐ 1 tsp oil 1-2 tbsp water (add only if required) Knead a soft dough, cover & let it rest for 20mins. Now take a parchment paper, grease it with some oil & using hands roll out a paratha as shown ๐ซ Cook it with little ghee until golden brown on both sides. Healthy Tandoori Chole Salad ๐ ~ Itโs wholesome, filling & packed with flavours โจ ๐ฉโ๐ณ Ingredients : Creamy tandoori sauce/dressing - 100g low fat paneer 100g Greek yogurt / hung curd 2 soaked Kashmiri dry red chilli ๐ถ๏ธ 3 garlic cloves 1 tsp salt 2/3 tsp roasted cumin powder 1/2 tsp red chilli powder 1/2 tsp black pepper powder 1.5 tsp mustard oil (preferably cold pressed) 1/3 cup water (add as per required consistency) Blend in into a smooth sauce For a tandoori flavour, place an onion slice in the sauce, put hot charcoal on it & add few drops of ghee. Cover for 2-3mins & let the flavours get infused! ๐ฅ Assemble the salad - 2/3 cup cooked chole / chickpeas 1/3 cup chopped cucumber ๐ฅ 1/3 cup boiled sweet corn ๐ฝ 1/3 cup onions 1/3 cup tomato 1/2 cup chopped apple ๐ 1/3 cup shredded carrot ๐ฅ Add the tandoori dressing & garnish with fresh mint leaves. Keep 3 tbsp seeds aside after roasting, for later use) 1/3 cup almonds 1/3 cup cashews 1/4 cup walnuts 4 tbsp pumpkin seeds 4 tbsp sunflower seeds { you can add any nuts & seeds of choice } 1/2 cup desiccated coconut powder Now coarsely grind the roasted sesame seeds, then add warm 2 tbsp cold pressed coconut oil ๐ฅฅ & 2/3 cup jaggery. Next grind all the nuts & seeds mixture until they slightly start releasing their own natural oil (this will help with binding) Finally add 3 tbsp roasted sesame seeds, 1 tsp cardamom powder , mix everything well & form small laddoos as shown. Soft & Delicious Millet Idli ๐ ~ A perfect option for breakfast as well as kids tiffin box! โจ SAVE IT TO TRY SOON ๐ฉโ๐ณ Ingredients : 1/2 cup short grain rice 1/2 cup whole ragi / finger millet 1/2 cup yellow moong dal Wash & soak for 2-3 hours Grind the soaked ingredients into a thick smooth batter adding 1/3 cup water & a very little water If time permits, ferment the batter for 5-6hours. For an instant version, just add 1/2 tsp salt & 2/3 tsp Eno (for one batch of idli) Mix immediately & steam the idli for 20mins on medium flame. Gujarati Methi Na Muthiya ๐ SAVE IT TO TRY SOON ๐ฉโ๐ณ Ingredients : 1 cup chopped fenugreek/methi leaves ๐ 1/3 cup chopped coriander leaves 1.5 tsp salt 1 tsp ajwain / carom seeds 1.5 tbsp white sesame seeds 2-3 finely chopped green chillies 1 tsp ginger paste 1.5 tsp cumin-coriander powder 1 tsp red chilli powder 1/2 tsp turmeric powder 1 tbsp jaggery Juice of half lemon ๐ 1 tbsp oil 2/3 cup whole wheat flour 1/3 cup besan 1/4 cup sooji Pinch of cooking soda (optional) 3 tbsp curd Mix everything well as shown, add few drops of water only if required. Shape the muthia, grease the steamer plate with some oil & steam muthias on medium flame for 20-22mins until the knife comes out almost clean. ๐๐ป Once the muthiya cools down a bit, cut it into smaller pieces as shown. ๐ฅ Tadka - 3 tbsp oil 1 tsp mustard seeds 1/2 tsp hing / asafoetida 2-3 tbsp white sesame seeds 7-8 curry leaves ๐ Add the chopped muthiya & cook until the outer layer becomes slight crisp & golden brown. Garnish with some chopped coriander leaves & serve hot! Umbadiyu or Ubadyu is a local delicacy & seasonal dish from the districts of South Gujarat : Navsari, Surat & Valsad. โจ The dish is mostly eaten in winter due to availability of ingredients.
