Vegetable Jowar Paratha ๐Ÿ˜ ~ Perfect Gluten Free option packed with winter veggies like green garlic, carrots & raddish โœจ SAVE IT TO TRY SOON ๐Ÿ‘ฉโ€๐Ÿณ Ingredients : 1/3 cup grated mooli / raddish 1/3 cup grated gajar / carrot ๐Ÿฅ• 1/3 cup chopped onions 1 tbsp ginger-green chili paste 1 tbsp green garlic 1.5 tsp salt Mix everything & rest for 5-10mins. This will release all the water from the veggies 1 tbsp ajwain 1.5 tbsp white sesame seeds 2 tsp cumin-coriander powder 1 tsp red chilli powder 2/3 tsp turmeric powder 120g low fat paneer 2/3 cup jowar aata 1/3 cup besan Handful of coriander leaves ๐Ÿƒ 1 tsp oil 1-2 tbsp water (add only if required) Knead a soft dough, cover & let it rest for 20mins. Now take a parchment paper, grease it with some oil & using hands roll out a paratha as shown ๐Ÿซ“ Cook it with little ghee until golden brown on both sides. Healthy Tandoori Chole Salad ๐Ÿ˜ ~ Itโ€™s wholesome, filling & packed with flavours โœจ ๐Ÿ‘ฉโ€๐Ÿณ Ingredients : Creamy tandoori sauce/dressing - 100g low fat paneer 100g Greek yogurt / hung curd 2 soaked Kashmiri dry red chilli ๐ŸŒถ๏ธ 3 garlic cloves 1 tsp salt 2/3 tsp roasted cumin powder 1/2 tsp red chilli powder 1/2 tsp black pepper powder 1.5 tsp mustard oil (preferably cold pressed) 1/3 cup water (add as per required consistency) Blend in into a smooth sauce For a tandoori flavour, place an onion slice in the sauce, put hot charcoal on it & add few drops of ghee. Soft & Delicious Millet Idli ๐Ÿ˜ ~ A perfect option for breakfast as well as kids tiffin box! โœจ SAVE IT TO TRY SOON ๐Ÿ‘ฉโ€๐Ÿณ Ingredients : 1/2 cup short grain rice 1/2 cup whole ragi / finger millet 1/2 cup yellow moong dal Wash & soak for 2-3 hours Grind the soaked ingredients into a thick smooth batter adding 1/3 cup water & a very little water If time permits, ferment the batter for 5-6hours. For an instant version, just add 1/2 tsp salt & 2/3 tsp Eno (for one batch of idli) Mix immediately & steam the idli for 20mins on medium flame. Healthy & Tasty Matar Chaat ๐Ÿ˜ ~ A perfect high protein option when craving for something chatpata โœจ SAVE IT TO TRY SOON ๐Ÿ‘ฉโ€๐Ÿณ Ingredients : 1 cup white matar (wash & soak for at least 6-7hrs - overnight preferably) Pressure cook the matar along with 1tsp salt, 1/2tsp hing, 1 bay leafy & 2 cups water for 4-5 whistles. Gujarati Methi Na Muthiya ๐Ÿ’š SAVE IT TO TRY SOON ๐Ÿ‘ฉโ€๐Ÿณ Ingredients : 1 cup chopped fenugreek/methi leaves ๐Ÿƒ 1/3 cup chopped coriander leaves 1.5 tsp salt 1 tsp ajwain / carom seeds 1.5 tbsp white sesame seeds 2-3 finely chopped green chillies 1 tsp ginger paste 1.5 tsp cumin-coriander powder 1 tsp red chilli powder 1/2 tsp turmeric powder 1 tbsp jaggery Juice of half lemon ๐Ÿ‹ 1 tbsp oil 2/3 cup whole wheat flour 1/3 cup besan 1/4 cup sooji Pinch of cooking soda (optional) 3 tbsp curd Mix everything well as shown, add few drops of water only if required. Shape the muthia, grease the steamer plate with some oil & steam muthias on medium flame for 20-22mins until the knife comes out almost clean. ๐Ÿ‘‰๐Ÿป Once the muthiya cools down a bit, cut it into smaller pieces as shown. ๐Ÿ”ฅ Tadka - 3 tbsp oil 1 tsp mustard seeds 1/2 tsp hing / asafoetida 2-3 tbsp white sesame seeds 7-8 curry leaves ๐Ÿƒ Add the chopped muthiya & cook until the outer layer becomes slight crisp & golden brown. Garnish with some chopped coriander leaves & serve hot! Umbadiyu or Ubadyu is a local delicacy & seasonal dish from the districts of South Gujarat : Navsari, Surat & Valsad. โœจ The dish is mostly eaten in winter due to availability of ingredients. Healthier Version : Pink Pasta Salad ๐Ÿ’– ~ Itโ€™s creamy, delicious packed with fiber & protein โœจ SAVE IT TO TRY SOON ๐Ÿ‘ฉโ€๐Ÿณ Ingredients : 1/2 cup hung curd or Greek yogurt 1 grated garlic clove 1/3 grated beetroot (par-boiled, 80% cooked) 1/2 tsp salt (as per taste) 1/3 tsp black pepper powder 1 tsp red chilli flakes 1 tsp extra virgin olive oil ๐Ÿซ’ 1/3 cup chopped onions 1/3 cup cucumber ๐Ÿฅ’ 1/3 cup tomato ๐Ÿ… 1/3 cup boiled macaroni { preferably use whole wheat or emmer wheat pasta.
