Too soon for another cookie recipe?! Never! I’m still on the molasses/gingerbread train and these are amazing! Warm, slightly sweet, cozy, and totally seasonal. This recipe is from @mollyjwilk and I used my cookie mold from @tuckamorehomestead. (Molly also sells molds, fun kitchenware, and on line baking classes!🙌🏼👩🏻‍🍳🍪🍪🍰) It takes a little practice but I think I’ve got these fairly figured out. The 2 main keys are to 1.) lightly dust the mold with flour and 2.) put them in the fridge before baking. The molds are an investment but maybe Santa can bring you one.😉❤️🎅🏼You’ve been good this year.😉😉 . MOLLY J WILK’S MOLDED GINGERBREAD COOKIES ~ Heat oven to 375F. 6 Tablespoons butter, at room temperature 2/3 cup light brown sugar 1 large egg 1/2 cup molasses 1 teaspoon vanilla 375 grams (2 3/4-3 cups) flour 1 tablespoon ground ginger 1 Tablespoon ground cinnamon 1/4 teaspoon cloves 1/2 teaspoon nutmeg 1/4 teaspoon salt INSTRUCTIONS Beat in mixer bowl, butter and brown sugar until soft. Add egg, molasses, and vanilla. In a second bowl whisk together all the dry ingredients together and slowly add to butter mixture. Dough should be stiff but not crumbly. Dump on to counter and knead 3-4 times. Lightly flour your counter and then roll out to about 1/4-1/2” thick. (Thickness will depend on your mold) Gently and evenly press the flour dusted mold into the dough. Lift and cut out the shape with a cutter or knife. Place in parchment lined cookie sheet. Chill at least 30 minutes. Bake 10-14 minutes. Top should be firm but springy. Cool 10 minutes on a rack. GLAZE: 1 1/2 cups powdered sugar 4-5 tablespoons milk 1 teaspoon vanilla Mix together, adjusting the milk. It should stay on top of the cookie without hiding the mold design. Dip the cookie tops into glaze and then use a pastry brush to remove excess. Allow to dry on parchment paper. No sign of pumpkins in this house after today. We’ve switched gears to Christmas and it couldn’t be cozier. Saturday evening we attended the musical version of “Miracle on 34th Street”@wagonwheelcenter in Warsaw. What a wonderful way to spend a Saturday night during the holidays! We loved it! I think that molasses and gingerbread are the perfect bridge from Thanksgiving to Christmas and these soft molasses cookies that my late mother-in-law made are my favorite. The addition of the pumpkin dip definitely makes these a “more please” treat! Here’s the recipe for: SOFT MOLASSES COOKIES 1/2 cup butter 1/2 cup shortening (Crisco) 1 1/2 cups sugar 1/2 cup molasses 2 eggs, slightly beaten 4 cups flour 1/2 teaspoon salt 2 1/4 teaspoons baking soda 2 1/4 teaspoons ground ginger 1 1/4 teaspoons ground cinnamon 1 1/4 teaspoons ground cloves Heat oven to 350F. Cream butter, shortening, and sugar until light and fluffy. Beat in eggs and molasses. Set aside. In another large bowl combine flour, salt, baking soda, ginger, cinnamon, and cloves. Whisk together and then gradually add to the butter mixture until smooth. Roll into 1 1/3” balls and dip tops in sugar. Place about 2 1/2” on baking sheet. Bake about 11 minutes. Be careful not to over bake. They’ll be good but not soft. PUMPKIN DIP 8 ounces cream cheese, at room temp 14-16 ounces canned pumpkin 2 cups powdered sugar 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger Mix together and serve with cookies. (If the cream cheese isn’t warm enough you’ll have tiny white bits. No worries!) . Turkey Rice Bake- you’re gonna lovvve it! We’re using up the leftover Thanksgiving turkey! Let’s go! INGREDIENTS - 1/2 cup butter 1/2 cup chopped onion 1/2 cup chopped celery 2 cups diced turkey (chicken is good too) 1 cup uncooked rice- any type 1 can (10.5 ounces) cream of chicken soup 1 can (10.5 ounces) cream of celery soup 2 cups milk 2 cups water Salt and pepper to taste 1 teaspoon curry powder INSTRUCTIONS- Sauté onion and celery in melted butter in large ovenproof skillet. (Or you can pour everything into a 9 x 13 later to bake.) Add everything else and stir carefully to combine. (Pour into 9x13 if desired) Top with sliced or slivered almonds. Bake for 2 hours on 350F. Reheats really well! Isn’t that easy?! Last week I finally got my bulbs in the ground and a few windows washed before the cold snap (I.e. winter🥶😆) Both jobs had been on my mind for weeks and finally getting them off the to-do list meant a celebration of chicken pot pie and puppy cuddles. I’m finishing the tablescape before sunrise this year. Grandma’s dishes in service, mismatched glassware, mom donating leftover napkins from years ago. But that doesn’t matter much to me. It’s the food and family time that I cherish. To be honest, our group is smaller this year as attitudes, relationships, and miles have separated us. Sometimes life is a bit tough and people can’t forget a hasty unkind word or an unforgiven act. Sometimes, when we finally meet someone we’ve been longing to meet, they’re a little bit of a disappointment. Not as friendly, not as fun, not as special as we thought they’d be. Well, the past two days were not like that! Dawn (also known as my bff, Ethel, for our typically Lucy and Ethel escapades) and I made our way up into Michigan on Tuesday to finally met up with Linda @lindahundt and @sweetieliciousbakery for a “gab and gather” at an antique shop and then the next day at her sweet bakery. I think it was love at first sight as we shared our dreams fulfilled, recovered heartaches, and God’s gentle leading on our lives. What an amazing day of memories made! When Dawn and I got back in the car to head home to Indiana, we decided that Linda was the perfect blend of sunshine, gum drops, and candy canes with a puff of blond curls on top!
