Super excited to be sharing this new dish inspired heavyly by @goodgraces.sg and uncle Jeffery from @nonyabong. Although it’s been a while since his passing I’ve been hooked on this idea that I would be able to grill an otah and he would approve it. So I bugged grace for her otah recipe and for the last 1 month I’ve been constantly trying to push the boundaries of this dish with the nbnt team who each had a role to play in its development. It’s super Liao heavy, mean to to mimick a grilled fish dish, spicy, salty and hopefully dirty af.

You’ve got to try this super dirty umami butter and scrambled eggs recipe. Ingredients 3 eggs 1 tsp of unsalted butter / oil for scrambling the eggs 1 teaspoon of umami butter 1 slice of Cheddar cheese Sprinkle of Black pepper 1. Whisk your eggs 2. Warm your pan 3. Add oil/ regular unsalted butter till it melts 4. Add in your whisked eggs and scramble them till they are cooked medium well. 5. Let it sit in the pan to carry over cooking and form a base 6. Layer the cheese 7. Add a dollop of umami butter 8. Add black pepper 9. Let the butter melt slowly into the eggs 10. Mix it up Thank me later Pro tips - use a non stick pan - Cook your eggs till medium well - Bring your jar of butter out to room temp for 30 mins first - Do not add any salt - I know you’re gonna wanna eat this everyday but you’re gonna get fat.

Can’t thank Eugene enough for inviting us to dinner at his home last Friday. We were very happy to have been able to join what Chef @samchablani called his “sixth last” @noburnnotaste’s BBQ-at-your-home event. After he did a quick introduction, charcoal-grilled sourdough was brought out. And to slather on those pieces of smoky crusty bread, we had #noburnnotaste’s signature umami butter. If you didn’t already know, anything that touches, turns to gastronomic gold. Platters of barbecued shiokness showed up right after. The chicken wings were well-marinated and we relished them with sambal belachan and a squeeze of fresh lime. Skewers of very tender and spicy Iberico pork satay also got us all excited. I myself was particularly besotted with the superb otah made with aged barramundi and tiger prawns in a spice paste created in conjunction with @goodgraces.sg. The chargrilled fresh white corn from Cameron Highlands were a welcome sight as they provided a palate-refreshing crunch. Trust @samchablani to serve his basil oil-dressed burrata, arugula and tomato salad with a side of cheesiness 😂 – I’ll leave it to you to listen for what was said in my Reel. The cubes of smoked Wagyu ribeye that arrived next, were beautifully smoky, and boasted a buttery-soft mouthfeel. It was damn hard to stop once I started on them. ⬇️ Continued below ⬇️
