Speedy Sesame Dumplings Noodle Soup (Recipe below ⬇️) This recipe is for the days when you don’t feel like cooking, but still want a home-cooked cozy meal. It’s high-protein, plant-based, and only takes 15 minutes to whip up featuring the deliciously dependable dumplings from @laobandumplings. 🍜 Protein breakdown (33g per serving): * dumplings: 5g * sesame paste: 5g * wheat noodles 9g * fried tofu: 14g For the frozen ingredients 5 Livin’ On the Vedge dumplings 1/2 cup frozen mixed mushrooms 1/2 cup frozen spinach 1/4 cup frozen onions, diced 1 tbsp frozen garlic, minced 1 tbsp oil For the creamy sesame broth 1/4 cup Chinese sesame paste 1 tbsp light soy sauce 1 tsp dark soy sauce 1 tbsp sambal oelek 1 tsp maple syrup 1 tsp sesame oil 1/2 cup coconut milk For everything else 1 serving of Chinese wheat noodles (medium-sized) 1 tbsp chili oil Handful of cilantro 1 tbsp fried onions 85g fried tofu, crumbled Juice of a lime Method (pinned in comments) #laobanpartner, #laoban, #weeknightdinners, #freezermeals, #mealinspo

Hosted my first Cookbook Club with @stephh_lau, featuring @thekoreanvegan cookbook (and during Veganuary!!! 🌱) I’ll never forget the first time I attended one of Stephanie’s Cookbook Clubs. I remember feeling so at home in a space where everyone shared a love for cooking, enjoying great food, making new friends, and exploring new cultures through food. So, when Stephanie asked me to co-host one, I immediately said yes! And as a longtime, massive fan of Joanne (see last pic from Nov 2021), I knew it had to be from her cookbook—the one that started it all for me. Thank you to every single attendee for putting so much care and thought into each dish. ❤️ I’ve never tried so many Korean vegan dishes in my life! My belly and heart are still so full from this event. This one was truly unforgettable.
