I know, I know... the dream is a lot more fun when it has land & an aging farmhouse and a milk cow in the barn. But you don't have to have those things to start homesteading. You can take that first step now by reducing your dependence on the grocery store. Bake your own bread. Buy chicken from your local farmer & can some of it. Start planning your container garden for next spring. Little steps get to bigger steps. We often want to take the leap, but sometimes, the leap isn't realistic yet. Start right now with what you have.

Don't worry. It's not mold. Kahm yeast is common to find in ferments. It's a white film that will cover the top of your liquid & sometimes the veggies. It's harmless but can affect the flavor of your fermented food. Use your pressure canner as a pressure cooker to turn frozen whole birds into tender meat that can be canned & put on the shelf for later use! This is how we work through our whole birds, which are raised right here on the homestead. They go into the freezer after we harvest them. Then, over time, we'll process them in small batches in the pressure canner while making delicious stock. Here's what we use: ▪︎ 4 whole chickens (ours were an avg of 4lbs each) ▪︎ 4-5 stalks of celery ▪︎ 1 onion ▪︎ 5 cloves garlic ▪︎ 4 bay leaves ▪︎ Thyme, rosemary, peppercorn & sea salt Here's what we do: ▪︎ Add celery, onion, garlic, bay leaves & seasoning to the canner. Then add the chicken on top - you can use frozen or fresh. ▪︎ Add 15 cups of water. ▪︎ Put the lid on the canner & seal as normal. Vent for ten minutes & then add a 15lb weight. Once your gauge reaches 15psi, you'll start your timer. ▪︎ You'll use the largest bird to gauge cooking time (not total weight of all birds). Pressure cook 5min per pound @ 15psi It usually takes about 20 minutes to cook 4 birds weighing 4lbs each. . . . . #pressurecooking #pasturedpoultry #homesteading #homesteadingfamily #homesteadersofamerica #homesteader #canning #canningchicken #selfsufficient

Let the kids be kids. Let them play. Let them explore. Let them fall down so they know how to get back up again. Let them find courage within themselves by having experiences that challenge them mentally & physically. Staring at a screen is doing more damage than we know.
