✨THE PROUD CHILD OF IMMIGRANTS✨ I wasn’t always…..my mum was born in a mud hut in Africa and has worked so f*cking hard to be accepted here. When they arrived, my grandad experienced relentless racism working for TFL; stories that would break your heart in two, but he kept his chin up to be able to provide for his family. My mum has given 40 YEARS of her soul to the NHS to save the lives of the very people lining the streets chanting for her to ‘go back home’, riddle me that madness? The P word is nothing new but it has a nostalgic sting from my childhood. Smoky black bean & tofu tacos🌮🫘🥑🌶️ INGREDIENTS [8 tacos] 200g extra firm tofu 2 tablespoons fajita seasoning —— 4 tablespoons passata 4 garlic cloves 2 tins black beans 1 tablespoon chipotle paste 1 tablespoon tomato puree —— Avocado Spring onion Gherkins Coriander Sea salt —— 8 soft tortillas Grated vegan cheese Vegan pesto Crunchy lettuce Olive oil METHOD 1] Grate tofu onto baking tray, sprinkle with fajita mix & oil, combine well. Bake for 12-14 minutes at 180c 2] Drain beans, add to saucepan along with crushed garlic, chipotle & both tomato components 3] Cook for 8-10 minutes, add half a cup of water if needed to loosen 4] Create guacamole with crushed avocado, salt, sliced onions, diced gherkins & chopped coriander 5] Assemble tacos with guacamole, chopped lettuce, cheese, pesto, beans & tofu. Rainbow fritters ✨✨✨ INGREDIENTS [makes 10-12] 590g white potatoes 250g carrots 150g red cabbage 120g gram flour 80g cavolo nero kale 20g flat leaf parsley 2 spring onions Half a red onion 2 tablespoons ground cumin 1 tablespoon nigella seeds 1 tablespoon ground garlic 1 tablespoon ground onion Sesame oil to fry Sea salt METHOD 1] Grate potatoes extra fine, squeeze out excess moisture & add to large mixing bowl 2] Grate carrots, add to the bowl 3] Tear kale from stem, roll tightly & shred finely with a knife. Add to bowl 4] Finely shred cabbage. Add to bowl 5] Finely slice spring & red onion. Add to bowl 6] Add ground garlic, onion & cumin along with roughly chopped parsley. Combine with hands, using a fork to help tease out the clumps 7] Toast nigella seeds on a dry pan for 1-2 minutes. Panko coconut tofu sub @tarasvegantreats🥪🥥🌶️🧄🥖🌿 INGREDIENTS [1 sub] 200g extra firm tofu Vegetable oil for frying —— 50g plain flour 80ml unsweetened soy milk ——— 50g panko breadcrumbs 3 teaspoons desiccated coconut Pinch of salt -—— 60ml toasted sesame oil Half a red chilli 3 garlic cloves 1 small shallot Bunch of chives -—— 2 teaspoons salted vegan butter ¼ teaspoon white miso paste ——— Cucumber Radish Vegan chilli mayo Baguette METHOD 1] Cut tofu into slices that will fit snugly into your baguette shape, pat until dry 2] Fry in vegetable oil for 6-7 minutes on both sides 3] Create coating station with whisked batter & breadcrumb mix in two separate bowls 4] Add tofu to batter mix & coat evenly, use a fork to lift out & place into breadcrumb mix, coat well. Soon began to resent the mini courgettes for preventing this meal from becoming a one pan wonder 🍅🧄🌿 Off camera confession: made a quick garlic bread with a leftover burger bap to dip dip! INGREDIENTS [serves 2] 200g orzo 1.1L veg stock 90g sundried tomatoes 6-8 kale leaves 4 garlic cloves 2 large shallots 1 tablespoon tomato puree Handful of black olives Optional vegan chorizo Optional baby courgettes Optional black pepper Walnut oil METHOD 1] Sautè diced shallots in a drizzle of walnut oil for 10-12 minutes 2] Blend tomatoes, olives & garlic 3] Add to pan alongside orzo, stir well 4] Add tomato puree to 500ml stock, stir well. Add to pan 5] Bring to simmer & cover for 10 minutes, stirring in between 6] Add remaining stock every 2-3 minutes if needed 7] Separately fry courgettes & chorizo crumble for toppings 8] For final 5-10 minutes of orzo cooking, add torn kale & stir well 9] Remove from heat when pasta is tender, serve & enjoy with black pepper
