It’s TRUE! But WHY?!? ✨You do NOT have to wait around all day trying to catch your starter at “peak”. Using your starter to mix dough after it has come down is actually the perfect time IMO! ✨When you feed a sourdough starter, the yeast cells feed off the carbohydrates or sugars in the flour and turn them into carbon dioxide and ethanol. This is known as alcoholic fermentation. ✨Yes, it’s true that this yeast colony is at its largest when your starter culture is at “peak”. ✨But, the reduction in colony size after the culture has come down, is actually very minimal. But their hunger for more sugar and starches is high! Therefore you still get the large colony, but at a point where they are more eager to start eating! ✨When’s the right time? If you consider “peak” to be when your culture has doubled in size. Then you want to look out for a 10-30% reduction from peak. The culture should still be nice bubbly and airy, not flat and lifeless. ✨This information shouldn’t have you now waiting around measuring the post-peak drop. Instead you should use it as a tool to expand your dough mixing time from the tried and true “peak” to this 10-30% peak reduction time. ✨With that said, NEVER, and I mean NEVER, use your culture before peak. Even feeding your culture before it has reach peak (or past peak) can put the wild yeast and bacteria into a hibernation state. Overfeeding is a real thing! 🤍Happy Baking, ILYSM
