If I could go back and change anything about my vegan culinary journey, I wouldn’t touch a thing. Cooking for Iconic Queens is something to talk about and I’m learning to own that. There's something about the title "Celebrity Chef" that makes me blush, but honestly, I'm beyond grateful for the incredible experiences I've had! Over the years, I've had the privilege of cooking for and alongside some truly phenomenal women who just happen to be your favorite celebrities. I've whipped up many soul-satisfying vegan feasts for the one and only @iamtabithabrown . Her smile after devouring my plant-based mac and cheese is something I'll never forget! @fantasia , my former personal chef client, still craves my legendary vegan meatloaf and decadent desserts. @jazminesullivan sliding through the city for her tour and requesting me was a manifestation from day one, I heard she was eating vegan. From @jesshilarious_official booking me in the middle of the night after a night of having a night out and cooking for the next two days and even getting her in the kitchen was hilarious. And let me tell you, when @tsmadison digs into my mouthwatering vegan oxtails and potato salad, it's a true testament to the power of plant-based comfort food because she’s not eating flowers 😂 @therealmoworldwide who’s been whipping up my recipes on her own and having me in the kitchen to teach her some more recipes was a cherry on top of it all. Did you really just make a Filet O no Fish 😃 1 block extra-firm tofu, pressed and cut into 4-6 rectangular fillets crushed nori for fishy flavor • 1/2 cup all-purpose flour seasoned with Just Magic Seasoning • 1 cup plant-based buttermilk milk • 1 cup panko breadcrumbs • 1 teaspoon Old Bay seasoning • 1 teaspoon garlic powder • 1 teaspoon onion powder • 1 teaspoon smoked paprika 1-2 tbsp vegan Worcestershire • Salt and pepper, to taste • Oil for frying For the Tartar Sauce: • 1/2 cup vegan mayo • 1 tablespoon relish (sweet or dill) • 1 teaspoon Dijon mustard • 1 tablespoon lemon juice • Salt and pepper, to taste #cooking #veganfood #sandwich #plantbased #chefjoya

Tender Oxtails and Gravy in 30 mins We ain’t trying to hear that noise about vegans can’t have the foods they loved before going vegan. There’s plenty of recipes for oxtails but you won’t find one like this. It’s completely plant based and ready to go straight from the pack. The key to making these extra flavorful and tender is to marinate @sunnispeaksvegan Smackin Oxtails with your veggies, Chef Joya’s Red House Seasoning Blend, and dry red wine. Roast for 20 mins and add them to your gravy and enjoy. Try it out and let me know how they smack! 1 lb Smackin oxtail 2 tbsp mushroom soy sauce 1 tbsp browning sauce 2 tbsp brown sugar 2 tbsp Chef Joya’s Red House Seasoning 1 tbsp garlic powder 1 tbsp onion powder 1 tsp paprika 1 tsp dried thyme 4 sprigs fresh thyme 6 cloves garlic, minced 4 green onions, chopped 2 Scotch bonnet pepper, pierced ( don’t pierce if you don’t like heat) 1 cup red wine 2 medium carrots, chopped (optional) 1 cup red and green bell peppers, chopped 1/2 large onion, chopped 1 can butter beans (drained) 2 cups vegetable broth or water 1 tbsp vegan beef bouillon 1 tbsp tomato paste or ketchup 3 tbsp oil (for sautéing) 1/4 tsp liquid smoke Salt and pepper to taste More delicious vegan soul food and Caribbean food in my cookbooks #oxtails #foodporn #cooking #chefjoya #soulfood
