Soup season is here (although, in my humble opinion it never actually leaves) and there is nothing better than a simple, warm bowl of classic Minestrone. I love how versatile this soup is, you can add in or leave out whichever veggies you want, add in beans or chicken for protein, throw in a parmesan rind for saltiness, add in pasta or simmer it until its a thick ragu and spoon is over white basmati rice. This recipe uses fire roasted tomatoes for a bit of smokiness and @midssauce tomato basil for a little extra flavor, but you can definitely use the traditional versions of these ingredients should you like. So here you go friends, I hope you enjoy. HEARTFELT MINESTRONE SOUP 1 onion, chopped 3 cloves of garlic, minced 1 green pepper, chopped 4 carrots, diced 3 celery stalks, diced 3 Tbsp butter 28 oz can fire roasted crushed tomatoes ½ c tomato sauce (We love ) 16 oz garbanzo beans, drained and rinsed 16 oz white northern beans, drained and rinsed 8-10 c. chicken broth ¾ c. sherry 1 tsp italian seasoning 1-2 tsp salt (use your own discretion) 1 c ditalini or small pasta, cooked separately Fresh Parmesan for serving In a large dutch oven or pot, melt your butter over medium heat and add in your chopped veggies and garlic. Saute until tender, about 10 min or so. Add in the sherry and deglaze the pan, scraping the bottom to get all the flavor. Add the crushed tomatoes, tomato sauce, chicken stock (start with 6 cups and add the rest as you need to) and beans. Add the seasoning and bring to a boil. Reduce to medium-low, cover and allow it to simmer until veggies are tender. To serve, boil pasta noodles as instructed and spoon into bowls. Top the pasta with the minestrone and finish off with beautiful freshly grated parmesan cheese. Enjoy!

BUTTERNUT SQUASH TOMATO SOUP 3-4 cups chopped butternut squash 3 carrots, chopped 1/2 onion, chopped 4 cloves garlic extra virgin olive oil salt + pepper 1 tbsp butter jar of @midssauce 4 cups broth 1/2 cup heavy whipping cream 1. Preheat your oven to 375 degrees. 2. Add all chopped veggies to a large baking sheet. Drizzle with EVOO and sprinkle with salt and pepper. 3. Roast in the oven for 35-40 minutes. 4. Put a large pot over medium heat. Add butter. 5. Add roasted veggies to the pot. Pour in the pasta sauce and broth. With an immersion blender, blend. 6. Let the soup simmer for 10-15 minutes. 7.
