𝙃𝙚𝙡𝙡𝙤 𝙮𝙪𝙢𝙢𝙮! 😍 Chocolate Sumac Fondant (gluten and lactose-free) Ingredients For 6 servings Cake • 6 eggs • 75 g unrefined sugar • 300 g dark chocolate (minimum 70%) • 125 g coconut butter • 100 g almond flour • 1 tsp sumac Poached Pear • 1 firm conference pear • 100 g water • 100 g sugar • A handful of hibiscus • 1 tsp sumac Mirror Glaze • 2 g agar-agar • 100 g water • 150 g unrefined sugar • 75 g unsweetened cocoa powder • 90 g coconut cream For the Cake Preheat the oven to 180°C. Whisk the egg yolks with the sugar and melt the chocolate with the coconut butter in a double boiler. Whisk the egg whites until stiff. Gently mix all the ingredients together. Butter the pan and pour in the mixture. Bake for 20 minutes. If necessary, extend baking by 5 minutes, but the cake should remain soft in the middle. For the Poached Pear Bring the water, sugar, and hibiscus to a boil. Maintain a gentle boil, then add the sumac and pear. Let it cook for about 10 minutes, checking with the tip of a knife: the pear should remain firm. Remove the pear from the syrup and let it thicken for 5 minutes over low heat. For the Mirror Glaze Combine all the ingredients in a saucepan and mix them cold. Bring to a boil while whisking and keep it boiling for 1 minute. Strain it. Pour the warm preparation over the cake and spread it evenly. Cut the pear in half and place it on top of the glaze. Just before serving, pour the syrup over the pear. Joumana Jacob prefers a subtle chocolate and sumac cake over overly creamy yule logs.
