Today was about making a garden lunch with some interesting vegetables, fruits, edible flowers and topping it off with home staples to create a tasty restaurant quality lunch. Harvested 2 cucumbers, Calendula flowers, Borage flowers & onion chives flowers and basil. Cucumbers sliced thin and flowers sprinkled over top. From the refrigerator I added red peppers, feta cheese and make a bowl of olive oil, balsamic vinegar and basil with sea salt. Besides being healthy, it is so yummy, colorful and the perfect lunch for the 80 degrees in Seattle. For the drink, I’m creating mocktails that are refreshing, full of flavor and festive. Fill a glass with ice. (I’ve made raspberry and blueberry ice cubes previously) add 3 cubes on top. Fill the glass 3/4 of lemonade and top with a hibiscus tea. Perfect mix of sweet and tart. Red potatoes harvested from a bag. These potatoes were rogue sprouting all over my garden. I dug the plants up and put together good soil with compost and planted in potato bags. Pretty nice harvest without much effort.
