You don’t need to be a pro to bake fresh, homemade bread- trust me, I’m proof! I started with very little cooking skills, but with patience, a little effort, some error and a lot of determination I’ve learned to create healthy delicious dishes. Like these soft, herb dinner rolls. They are simple and will impress everyone at the table. These rolls are proof that baking can be quick, easy and delicious. Even if you have never tried making bread 🥖 before. I always have a sense of satisfaction knowing I made them. No fancy tools, skills or ingredients required. If I can do it, you can as well. Have you baked your own bread? If you have, what kind? Save this post for inspiration What you need: 11 x 17 greased baking dish. Food scale Ingredients: 1 cup of very warm water 1/4 cup sugar 2 tablespoons yeast 1/3 cup oil ( preferably grapeseed) Combine the above ⬆️. Cover and let sit for 8 minutes Meanwhile… Lightly grease your baking dish Next set of ingredients: 1 egg beaten 1 tablespoon melted butter 1/2 teaspoons salt 3-4 cups properly measured flour (I use about 3.25 cups) Add as much of your desired spices. I used Italian dried spice Tiny bit of room temp mil set aside for brushing on the buns before you put them in the oven When the 8 minutes is up add the flour to your mixer (using a dough hook) slowly. Mix until not sticky. After, knead by hand for 10 minutes Divide dough into 18 pieces and form into balls. Place into the greased pan and cover with a kitchen towel. Let rise for 10 minutes. Lightly brush with the milk and bake on the middle rack for 10-12 minutes. I use a kitchen thermometer 🌡️ to make sure they are done. Inserting the thermometer and look for a reading of 190f is what you’re looking for. I don’t use measurements typically 1 scoop super greens powder 1 scoop vanilla protein powder 2 scoops collagen I tablespoon hemp Three tablets of glucosamine (I open the gel caps and poor the powder out) I used almond milk (as much as you like) but feel free to use coconut water -I’ll try that with the next one to see the difference Frozen banana = potassium Frozen pineapple = vitamin C -magnesium and helps in digestion Frozen kiwi -provides vitamin C, E and K and antioxidants I add everything to a blender and add a little ice and extra water. Eating well should taste AMAZING Cooking at home doesn’t just taste better, it’s a way to nourish both your body and soul. This simple and delicious roasted tomato pasta is bursting with not only flavour but vitamins, antioxidants, and fresh flavours that can elevate your health game. Tomatoes are loaded with lycopene which is great for your heart health. Pasta is your carb that helps keep you full. I would prefer to use whole wheat pasta, but my husband isn’t fond of it 😂- but we have been known to make our own pasta from scratch many times So by cooking your own meals, you have full control over ingredients. This makes it easier to create balance. When you follow me, you’ll see it’s easy to create balance in food and exercise. You’ll be inspired to create meals that nourish both your body and mind without having to buy expensive or unique ingredients. What you need - no measurements- I eyeball this whole meal 💙💙 cherry tomatoes 🍅 💙💙 garlic 🧄 💙💙 olive oil 💙💙 kale 🥬 💙💙 a little white wine 💙💙 salt and pepper 💙💙 optional- red pepper flakes What to do: 💚💚 take a dish that is oven safe 💚💚 preheat oven to 450f 💚💚cut the tomatoes in half- as many as you like. It needs to be a single layer in the dish. 💚💚 add enough olive oil to not quite cover the tomatoes but enough they can cook in. 💚💚 put a few cloves of garlic in with some thyme, salt/ pepper and optional pepper flakes. 💚💚 bake at 450f for 30-35 minute 💚💚 meanwhile, cook pasta until preferred tenderness. When the tomatoes are done ( there should be some charring and they burst) incorporate them into drained pasta. Add kale until wilted. 💚💚 add a splash of white wine to the mix while still in the pan. Cool for a few minutes to burn off the excess liquid. Healthy doesn’t have to be complicated. Quinoa is a staple in my home menu. So I regularly make quinoa patties. These are great not only day one but breakfast the next morning is even better if you warm them up and top with a medium egg. Another option is to make a “burger” out of them. Several options for quinoa lovers. When I started making them I followed a recipe. Now? I went a little rogue and added my own spin on things. Added a few more ingredients to make them even better. Below is my recipe: Start with quinoa. 1/2 cup quinoa and add 1 cup water. Cook according to package instructions. A little hint from me. Traditional instructions call for cooking covered for 15 minutes. I cook at a very low temp uncovered for the first 10. Then cover for remaining five minutes. After let stand and cool. So you can actually make the quinoa in advance easily. Add: 1 cup breadcrumbs 1/3 cup of Parmesan 3 finely chopped green onion Optional - finely diced broccoli 🥦 ( you can cook it or leave it uncooked) Optional- shredded carrot. 🥕 Maybe add some roasted veggies as a side or a green salad. You can also add some potato fries made in an air fryer. Want a freshly baked cake but afraid of eating more than you should? I got you. Try this very fast ( and I mean FAST) mini peanut butter chocolate cake. Very few ingredients and a very big taste. What you need : 1 egg 3 tablespoons smooth peanut butter 2 tablespoons syrup 1 tablespoon flour 1/4 teaspoons baking powder Little shake of salt As many chocolate chips as you like for topping Lightly grease either your mug or ramekin(s) Add the egg, maple syrup and peanut butter to a small bowl (or mug if that’s what you’re using). This forms the batter base. The fold in the flour, baking powder and salt. Sprinkle chocolate chips (I use both chocolate and caramel chips) on top. I prefer to use three ramekins for this amount of batter. Place either the mug or ramekins in your microwave and cook on high for 1-2 minutes. Depending on the strength of your microwave. Keep in mind this is still cooking after you take it out. You can normally tell it’s done by touching the top with your finger and feel how it springs back. A hot bowl of soup on a chilly day. Yes please! Do you love making soups when it’s cold outside? Soup is one of the easiest to make. Pretty much take anything from your fridge. Chop. Dice. Sauté. Add either a homemade broth or low sodium store bought. Cook 10-15 minutes. Done. My recipe for broccoli 🥦 soup: Lots of broccoli (chopped) Onion Mushrooms (either button or cremini) Celery Sauté the onion, celery and mushrooms for a few minutes. Add lots of stock. Either chicken or vegetable Throw in the broccoli. Cook for around 10 minutes or so. Until the broccoli is soft. Remove from heat Take an immersion blender and blend until everything is smooth. I add lactose free cream to make it silky while blending. I like to serve it with some crusty homemade bread or dinner buns. At age 28 I was diagnosed with slightly high cholesterol. At 28?? Yes, 28. Things changed for me pretty quickly at that point. Fast forward a few years and I had dropped 40lbs and changed fitness from a chore to a blessing. That doesn’t mean it’s all rainbows and unicorns. I have days where it’s not what I want to do. But I do it. You can too. You just need to know you’re worth it. If you commit yourself the only person you let down is yourself for not following through. I tell myself daily that I got this. The at I’ll feel so much better after. And I do! The move I’m showing here today is simple and compound. On your back raise up your hips to a bridge position. If you can, raise up on your toes. This will engage your hamstrings, quads, glutes and your core. Taking two lighter weights (I’m using 5lbs each) bring them in under your back and move them out. Back and forth. For one minute. Christmas is coming. Holidays festivities and lots of goodies to eat. This sweet treat is so delicious and simple you’ll make it over and over Save this post the next time you need an easy treat inspiration Ingredients: 🩷 2 cups of oats 🩷 2 tablespoons of cocoa powder 🩷 2 tablespoons of chia seeds 🩷 13 large dates. I used roughly 20 smaller dates. Soaked them in warm water for 30 minute. 🩷 juice from 1 large orange How to make them: Blend all ingredients together until the mixture can be formed into balls of the same size. If it’s too dry add a little date water. If it’s too wet then add a little bit more oats Take a cookie scoop (to have consistent size) and roll the dough into balls. You can also use a mini muffin tin pan. I used these cute little silicone flower 🌸 molds. When they have set you just press the bottoms and the treat pops right out. I find the silicon cups make it soooo easy to remove. I melted a good size amount of chocolate with a little bit of coconut oil. Without the oil chocolate can seize up. Making it impossible to pour. Top with the zest of the orange or even some flakes salt is you like. I set mine in the freezer for about 15 minutes.
