Here's a simple recipe for Aloo Dum Biryani: Ingredients: For Rice: - 500gms Zeeba premium basmati rice - water 3 to 4 ltrs - 2tsp salt - 1 tsp ghee -1 tbsp pudina chopped -2 green chillies slit -1inch dalchini -4cloves -4 elaichi -1tsp shahi jeera For Aloo Dum Masala: - 6 medium potatoes, peeled & cut in half - 100gm birista - 2tsp ginger paste 2tsp garlic paste - 1 tsp cumin seeds for tadka -2 tsp coriander powder - 1 tsp turmeric powder - 1 tsp red chili powder - 1 tsp garam masala powder 1tbsp biryani masala 250gm curd - 2 tbsp ghee - Salt, to taste For Layering: - 1/2 cup fried onions - 1 cup chopped fresh cilantro n pudina - 2 tbsp lemon juice Instructions: 1. Prepare Rice: Cook rice with salt, ghee, and water n masala until 70% done. Drain excess water. 2. Prepare Aloo Dum Masala: - Heat ghee in a pan. - Add cumin seeds, Marinate aloo on a mixture of curd birista 80gms garlic, ginger paste, and sauté until onion is golden. -coriander powder, turmeric powder, red chili powder, garam masala powderbiryani masala pudina and corainade and few chillies slit, and salt. Mix well. -heat oil in a pan add cumin once it crackles add the marinated aloo Cook until potatoes are 70% tender. 3. Layering: - In a large pot, create a layer of cooked rice. - Add a layer of Aloo Dum Masala. - Sprinkle fried onions, cilantro, and lemon juice. - Repeat layers until all ingredients are used, ending with a rice layer. 4. Dum Process: - Cover pot with a lid. - Seal edges with dough or foil. - Cook on low heat for 10-15 minutes. 5. Serve: Fluff rice gently and serve hot. Enjoy your delicious Aloo Dum Biryani!
